Dinner @ "Matera", reigning 1 Michelin Star at time of visit.
No, not the "standard" sour dough loaf. Instead, it was the much lighter Foccacia....but of course, since Matera is supposed to be an Italian restaurant (grin).
I have to confess - that Chinese Black Vinegar Glazed Crust was the BOMB! I usually do not enjoy bread crust - it had not given me too many fond memories but this crust was out of this world delicious! Lightly crunchy and packed with flavour - it was caramelic, tangy and yet savoury all at the same time. I utterly enjoyed it!
The Foccacia bread itself was airy, fluffy and soft as a sponge. Almost Chiffon cake like...well almost (grin).
However, I wasn't too enamoured by the Spanish olive oil and Chinese Sweet Black Vinegar dip...not a fan actually, as that vinegar reminded me more of Vinegar Pig Trotter (a Chinese dish associated with maternity care) which I truly dislike and none of the deep and rich fruitiness associated with Italian Balsamic Vinegar.
