Serving up Authenticity, 2025.05.18

I rode my E-bike over to Chicago Hotdog & Sausage Company for their Sunday Cruise hours. They recently added Chicago-style thin crust pizza to their menu.

When I arrived I quickly said, "Hi" to the owner, Chicago Mike. I meet a couple outside at the picnic table. They bought a pizza pie and had four slices left. They rode there on their motorcycle, so they offered me what they had left. I ended up having three slices.

I secured my E-bike to a picnic table and went inside. I listened to Chicago Mike and some other Chicago ex-pats talk about the neighborhoods and food.

I put an order in for an Italian Beef sandwich (dipped and with sweet peppers ) I got my lunch comped by Chicago Mike. We said our goodbyes and he went home. Leaving his cook and cashier to handle the last hour of service. I got my order and headed back home.

My E-bike ride ended up being 10.2 miles round trip. On our next visit, we're planning on getting two Chicago dogs.

Soaring Eagle Zipline, 2025.03.16

Went on a photo adventure with my NEPA photo friends: Jim Cook & Lewis DeJoseph. They arrived at my house around 10:30am We drove over to Zoo Knoxville for lots of photographic opportunities with the varied wildlife on display.

New thing to us at Zoo Knoxville. Soaring Eagle zipline.
This is over The Ravine. The floating boardwalk that will be opening up later this year!

We left the Zoo just before 4pm and headed West on I-40 to the newly opened Kpot : Korean BBQ & Hot Pot location (far West Knoxville / Farragut ) There was waiting list of 30-40mins before we were seated. All three of us got the BBQ and Hot Pot option. The food and service was amazing! It was my first ever Korean BBQ and Hot Pot experience. And I'll definitely seek out more Korean BBQ & Hot Pot options in the future!

Went on a photo adventure with my NEPA photo friends: Jim Cook & Lewis DeJoseph. They arrived at my house around 10:30am We drove over to Zoo Knoxville for lots of photographic opportunities with the varied wildlife on display.

Our very last stop at the zoo was getting a group photo in the Safari wagon (they have for kids to play on and take photos). We waited around hoping the kids playing would move on with their parents. So Lewis asked if the three little boys would let us take our two quick photos. So the one Mom told the boys, "We have to share with others". So we got our two photos!
I merged the two shots.. removing the one Mom out of background and using one pose of Me and Lewis and another of Jim. Oh, and I removed the original background and replaced it with a Generative Fill in Photoshop! The prompt I used was, "Safari grasslands with wild animals off in the distance".

We left the Zoo just before 4pm and headed West on I-40 to the newly opened Kpot : Korean BBQ & Hot Pot location (far West Knoxville / Farragut ) There was waiting list of 30-40mins before we were seated. After visiting the Giraffes, we moved on to the Valley of the Kings: Baboons and Lions . We briefly saw one baboon before it went inside. So we checked on getting shots of the two young lions. The Baboons made another appearance and I was able to get shots of both of them. And the Lioness had moved, so I got some shots of her!
