Soba (sometimes called "buckwheat noodles" in English) is a local specialty throughout much of Nagano Prefecture, and Matsumoto is no exception.

Tonight Tammy needed a break from cooking dinner (she's had the lion share of them since I started school) so I did a nice dinner for her & Johann. We've been eating more and more asian cuisine so why not go with that theme. I decided for hot summer night cold soba noodles with dipping sauce would be nice, and U-toy Oshitashi (cold slightly wilted U-toy (sort of like a very leafy baby brocoli) with sesame and Kaeshi (soy, mirin and sugar) dressing). The meat dish is garlic beef with gravy. Johann helped me by preparing all the soba condiments (shredded shiso leaves, green onions, shredded nori, roasted sesame seeds) and making the Oshitashi. He also helped make the Dashi stock that is part of the soba dipping sauce. He's shaping up to be a good cook.
