The Spanish national dish is colorful and diverse, because the types and recipes are almost endless. This is just one version of the dish with chicken, mussels, prawns and squid. Make sure to use a long grain rice or Paella rice.

Dinner @ "Rustica".
"beancurd puff, TheFishFarmer’s whole prawns & barramundi fish paste, laksa broth"
A major cardinal sin: The prawns wrapped up inside the "Tau Pok" beancurd puff skin was cooked on one side and very raw on the other side (where there were more sheets of "Tau Pok" skin due to uneven wrapping). Took a bite, sensed some strange texture in my mouth and glanced at the other piece of the wrap left on my plate to notice half a greyish prawn imbedded instead of the usual salmon pink. Had to spit out the content in my mouth). The entire dish was sent back to the kitchen.
My table also agreed that the laksa broth, while lusciously thick, was too salty and it needed more laksa leaves to liven up the laksa impression. It is Laksa, no?
I had returned to the bistro/cafe to try this dish as I thought it was a novel way to "re-invent" laksa. It was disappointing to be served raw prawns. How careless can the kitchen be (especially one with an open kitchen concept)? The front-of-house was highly apologetic but the damage had been done unfortunately, to leave a tainted impression. The kitchen needs to cook with more heart; less robot.
The cafe should be thankful that my table made naught of any fuss or drama.
High promise; Dud delivery.
Lunch @ "Ding Te Le 鼎特樂".
All 3 dishes tried came with rather thick skins.
Probably the best of the 3 dishes my table ordered since the pan-frying at least delivered some crunchiness to made up for the flaws.
Folks seeking "exploding juicy buns" would be greatly disappointed as there weren't a lot of meat juices in these "buns".
I ordered the assorted platter of both pure pork filling and pork filling with prawns. The prawns were minced with the pork so no whole prawns to be seen but I can taste the prawn.
Passable but nowhere coming close to my benchmark:
