1 small Groundhog, whole
1 can apricots or crushed pineapple
6 apples sliced
Salt and pepper to taste
Parboil meat until tender. Drain and fill with apples. Salt and pepper, then coat with apricots or crushed pineapple. Bake at 300 degrees until well browned
Goes great with rice or cornbread stuffing

Happy Groundhog Day 2025!
I went out this Groundhog Day morning looking for groundhogs in the snow so I might be able to post something timely, however, I was unable to find any, or even any signs of them having emerged from their burrows to look for mates, which is what they do around this time of year. I'm glad for the groundhogs' sake I didn't find any, because it's still very cold out and with all the snow cover this year, there is nothing for them to eat, and there probably won't be for a while yet. In any case, I happen to have a few [dozen ;o) ] groundhog photos in the hopper, so I'm pleased to share this one with you on this special day of the year.
In my area, most groundhogs embark on their hibernation around the the first week of September, however, the one in this photo was still active in October. I visited her/him frequently in those early days of autumn, and took this photo on the last day I saw her/him before hibernation. Fittingly I think, s/he was doing a lot of stretching that day and really did seem 'sleepier' than in the previous days. I look forward to becoming reacquainted with this beautiful individual in another couple of months.
