Fresh, familiar (who isn't familiar with this Mediterranean combo) and flavourful.
I enjoyed the contrasting yet tender chew from the grilled octopus and slices of chorizo in this relatively straightforward combination. I liked how even the flourishes - from the chorizo powder and the fava purée - were variations of the same key ingredients, which helped to keep my focus on the "simple" plate. Too often busy palette are brimming with superfluous elements, here, it was straightforward but still interesting.
I brought up the topic of valued components in a plate's composition (beyond the food just tasting good or being cooked well) with JC. I noted how I'm very much a textural eater - contrasts are important and keep me interested. JC's more visual, although we both agree that without well cooked food, nothing else matters.
Here, both are accomplished. That was nice.
There's something that the play of density, crunch, size of how particles roll on the tongue, how the teeth have to bite down, etc that makes food interactive, fun and memorable. JC noted that it was true that when she described food often it comes back to the texture. So see? I'm not that crazy with my interest with textures. Temperature is a close third for me. But that will be left to another discussion.
