I haven't added any cooking photos recently, but I think this one bears sharing. How often do we throw things away that we might utilize? It turns out that radish greens, if fresh & well washed, can be delicious & healthful! I recently bought two bunches of radishes. When I saw that the greens looked fresh, I removed them from the radishes, washed them very thoroughly & cooked them by the following method. I added the greens to a skillet with some olive oil, a couple minced cloves of garlic, & a little salt on medium-high heat. I sauteed until tender, turned off the heat & then added a splash of lemon juice & a sprinkling of parmesan cheese. Pretty tasty! One of the things I, as a single, like about radish greens is that they come in small amounts--usually just 1-2 servings! BTW, some people have asked if the leaves are spiny. Some may be; these were not. If you are concerned, just rub a leaf between thumb & finger to see. I wonder if there may be different varieties of radishes, some more spiny than others? The leaves are listed in many places as edible & they contain some great nutrients!
